Kuzhi Paniyaram

Ingredients:
  • Raw rice- 1 cup
  • Boiled rice- 1 cup
  • Urad dhal - 1/8 cup
  • Baking soda- a pinch
  • Salt to taste
  • For seasoning:
  • Mustard -1 tsp
  • Asafoetida- a pinch
  • Jeera- 1 tsp
  • Curry Leaves-5 to 6
  • Ginger- 1/4 tsp ( grated)
  • Coconut grated or finely cut- 1 cup
  • Onion- 1cup (finely chopped)
  • Green Chilly- 5 (finely chopped)
  • Coriander leaves- 1/4 cup (chopped)


Method:
  • Soak the raw rice , idle rice and urad dhal for 3 to 4 hrs and grind it in to a dosa atta consistency.
  • And leave batter covered in the room temperature for about 8 to 10 hrs to ferment .
  • After 8 to 10 hrs the batter is ready to make kuzhi paniyaram , add the baking soda and mix well.
  • On the other side heat a pan with little oil season it with mustard, jeera ,curry leaves, asaofoetida ,green chilly and ginger.
  • Add this to the batter.
  • Add Coriander leaves and grated coconut.
  • And mix well .
  • Heat kuzhi paniyaram kal with oil and slowly pour the batter into the each portion .
  • After 2 minutes slowly try to turn the kuzhi paniyaram when golden brown.
  • Remove the kuzhi paniyaram when both sides are brown and well cooked inside in medium flame .
  • Serve kuzhi paniyram hot with tomato chutney, coconut chutney etc.
  • Serve kuzhi paniyaram as morning breakfast or evening tiffin .
