- Raw rice- 1 cup
- Boiled rice- 1 cup
- Urad dhal - 1/8 cup
- Baking soda- a pinch
- Salt to taste
- For seasoning:
- Mustard -1 tsp
- Asafoetida- a pinch
- Jeera- 1 tsp
- Curry Leaves-5 to 6
- Ginger- 1/4 tsp ( grated)
- Coconut grated or finely cut- 1 cup
- Onion- 1cup (finely chopped)
- Green Chilly- 5 (finely chopped)
- Coriander leaves- 1/4 cup (chopped)
Method:
- Soak the raw rice , idle rice and urad dhal for 3 to 4 hrs and grind it in to a dosa atta consistency.
- And leave batter covered in the room temperature for about 8 to 10 hrs to ferment .
- After 8 to 10 hrs the batter is ready to make kuzhi paniyaram , add the baking soda and mix well.
- On the other side heat a pan with little oil season it with mustard, jeera ,curry leaves, asaofoetida ,green chilly and ginger.
- Add this to the batter.
- Add Coriander leaves and grated coconut.
- And mix well .
- Heat kuzhi paniyaram kal with oil and slowly pour the batter into the each portion .
- After 2 minutes slowly try to turn the kuzhi paniyaram when golden brown.
- Remove the kuzhi paniyaram when both sides are brown and well cooked inside in medium flame .
- Serve kuzhi paniyram hot with tomato chutney, coconut chutney etc.
- Serve kuzhi paniyaram as morning breakfast or evening tiffin .
